Tender, perfectly cooked prime rib served over wholesome farro, loaded with roasted cherry tomatoes, rainbow baby carrots, broccolini, and caramelized onions — all finished with a warm au jus drizzle. Ideal for meal prep or a satisfying family dinner.
Preparation Instructions
Roast the vegetables
Preheat oven to 400°F.
Toss cherry tomatoes and rainbow carrots with olive oil, salt, and pepper on a baking sheet.
Roast for 20–25 minutes until caramelized and tender.
Sauté the broccolini
In a skillet over medium-high heat, sauté broccolini in olive oil for 4–5 minutes until tender with a light char. Season to taste.
Caramelize the onions
Cook sliced onion in olive oil over low heat for 20–25 minutes, stirring occasionally, until golden and sweet. Season with salt to taste.
If you want to color quickly - add a dash of soy sauce and a tea spoon of sugar. Otherwise, take your time and let onions slowly caramelize until golden brown and finish with a table spoon of cold butter for shine.
Heat the Prime Rib
Prepare according to package instructions.
Heat the au jus separately in a microwave.
Once rested, slice or cube the steak into bite-sized pieces.

Heat cooked farro and divide evenly across four bowls (about ¾ cup per bowl).
