Preparation Instructions
Caramelize the onions
Heat olive oil or butter in a skillet over medium-low heat.
Add the sliced onions and cook slowly for 20–25 minutes, stirring occasionally, until they are soft, sweet, and golden brown. Season with salt and pepper to taste.
Prime Rib & Au Jus
Slice the beef as thinly as possible against the grain.
Pour the au jus into a microwave-safe container and heat thoroughly. Divide the warm au jus into four small ramekins or bowls for dipping.
Toast the Baguettes
Preheat your oven's broiler.
Butter the split baguettes and place them open-faced on a baking sheet.
Place under the broiler for 1–2 minutes, watching closely, until the bread is lightly toasted and golden. Remove from the oven.
Assemble
Spread a layer of mayonnaise on both the top and bottom halves of the toasted baguettes.
Pile the thinly sliced prime rib generously on the bottom half of the bread.
Layer the caramelized onions on top of the meat.
Drape the slices of provolone cheese directly over the onions.
Return the baking sheet to the broiler for another 1–2 minutes until the cheese is beautifully melted and bubbly over the meat.
Remove from the oven, cap with the top half of the baguette, and serve immediately with the warm au jus on the side for dipping.
